Taco Tuesday!


Taco Tuesday

Taco's are a staple in my weekly meal planning. They can be eaten any day of the week (like Taco Tuesday) and make for great leftovers for lunch the next day! They're delicious, healthy if you choose, super easy to make, and do not require much preparation. 

This week I decided to try something new and make mini tacos. Instead of a taco shell, I used wonton wrappers. Not your typical taco shell, but they're the perfect little shell to hold all the ingredients for the perfect few bites! What you put inside of the shell is up to you and your taste buds but here is what I used in mine:                   
Ingredients: 
- Wonton Wrappers
- Ground turkey, cooked with seasonings
- Chopped red onion
- Plain non-fat greek yogurt
- Homemade apple salsa 
- Chopped avocado 
- Cheese

For the wonton wrappers, preheat the oven to 350 degrees. Grab a muffin tin and coat each pocket with cooking spray or coconut oil. Lay each wrapper in the pocket and push down on each to create a shell. Once the oven is preheated, stick the wrappers in the oven and cook for 8-10 minutes or until each wonton is a light golden brown. Once they are a golden brown, take them out of the oven and let them cool. Once they are cooled down, assemble your taco's to your liking!
